In her brand-new cookbook Mary 90, former Great British Bake Off host Mary Berry shared a poultry recipe that involved a cheese I’d never heard of. It is a “rich cheese” that “melts over the chicken as it cooks,” the author wrote – one which could be substituted for coarsely-grated “firm brie, including the rind”. And after a little snooping, I learned that chefs Gordon Ramsay and Nigella Lawson love the “gooey” dairy number, too.We are talking, people, about Taleggio – the melty cow’s milk cheese with a mild flavour, pinky-taupe rind, and soft texture. What is Taleggio cheese? It comes from Northern Italy, BBC Food writes, and has a “fruity, creamy character”. It can only be made in certain parts of Lombardy and Piedmont because, like Parmigiano Reggiano, it’s protected by an EU protected designation of origin (PDO). That means every part of the production, processing and preparation process must take place in the specific region associated with the food.The semi-soft, soft-rind cheese (you can eat the outer layer) is described by cheese experts as having a “truly one-of-a-kind flavour profile”. Aged for a minimum of 25 days in caves, the cheese tastes “robust, buttery and meaty, and also laced with hints of fruitiness and a mild level of saltiness” and “has a melt-in-your-mouth quality that makes it perfect for spreading on bread or pairing with cured meats and fruits”. It gets creamier, but also stinkier, as it ages, and is made using five different types of mould. Like Mary Berry, James Martin’s recipe using the star ingredient says it “melts wonderfully”, making it the perfect topping to baked bases (for Mary it’s chicken; for James, it’s potato).It’s also perfect for fondue.Are there any cheeses like Taleggio? If you can’t quite get your hands on a block, Mary Berry said that some brie might do the same job (as we mentioned before). And per Castello, Gruyère and Fontina cheeses are pretty similar to Taleggio, too. But I’ll be honest: now that I’ve seen the cheese oozing out of Gordon Ramsay’s burger, I reckon I’ll try my hardest to secure the real deal.View this post on InstagramA post shared by Gordon Ramsay Street Burger (@gordonramsaystreetburger)Related...Does Cheese Cause Nightmares?
