We are, according to my social media feeds, officially in Soup Season. And even more precisely, a viral video posted by food creator @jujumaoo has made the autumn of 2025 Italian wedding soup season. Their recent post, which has racked up 9.5 million views as of the time of writing, joked that the classic recipe constitutes “soup so good it can cure any sickness”. While that claim is hyperbolic, we don’t think the hype around the comforting meal is overblown.What is “Italian wedding soup”? “Italian wedding soup” is thought to be a mistranslation of the Italian soup name “minestra maritata”. The original name is believed to have referred to the marriage of ingredients in the soup rather than the “marry me chicken”-style implications of the English language version.Some reckon the recipe was made in Spain before being brought to Naples, but it’s generally associated with southern Italy. Add all ingredients under “Meatballs” in a large bowl and mix by hand. Form into tiny balls and fry in a pan. Set aside for later. - For the soup saute onions, garlic, carrots, and celery until fragrant and soft. Deglaze with white wine, and add equal parts chicken and beef stock. Integrate your orzo pasta and top with a bay leaf and let simmer for a few minutes. - After that add your meatballs in, remove the bayleaf and top with chopped spinach. Fry these off and remove them from the pan.Then, make your soup using chopped onions, carrots, and celery fried in olive oil until soft (this is less negotiable).
