This 'Spanish BLT' Recipe Is About To Become Your Favourite WFH Lunch
"Spanish BLT"The weather really can’t make up its mind this summer, can it? First came the heatwaves, then the rumbling thunderstorms – and among it all, I’ve been finding myself either too hot or too rain-weary to cook much. That leaves my existing meal rotation in danger (full disclosure: I’ve had popcorn for dinner twice in a row this week). Nothing feels summery or low-lift enough. Or at least it didn’t until chef and co-founder of social media cooking hub Sorted Food, Ben Ebbrel, shared a “Spanish BLT” recipe from the company’s Sidekick app. After all, as Ebbrel says, “Summer is the season to stop and make the most of lunchtime. On weekdays, if you’re working from home, why not take a break from your desk and make a quick lunch that you can enjoy outside?“It’ll leave you feeling energised and get you out of that tuna sandwich rut.”What is a “Spanish BLT”? The chef shared that it’s basically a standard lettuce, pork, and tomato sando with a Mediterranean flair.“Think smoky Serrano ham, juicy tomatoes, and crisp lettuce layered up for the ultimate sandwich upgrade,” he shared.But the rules aren’t absolute.“Swap in Parma ham or salami if that’s what you’ve got – it’s bold, brilliant, and ready in minutes.” Ciabatta makes a soft, springy base for the fresh ingredients (much of which are at their best in the summer), though you can sub it out for any other loaf you like.The point is to pack a little more flavour – through spices like paprika, alliums like garlic, and cured versions of the usual bacon – per bite. Here’s the “Spanish BLT” recipe Ebbrel shared the best way to make the midday treat, which serves two and takes 15 minutes all-in:Ingredients:1 beef tomato(es)0.5 tsp smoked paprika0.5 tsp caster sugar1 ciabatta(s) (1x 250g)1 head(s) little gem lettuce(s)4 tbsp mayonnaise1 clove(s) garlic80 g serrano hamInstructions:Preheat the oven to 180°C.Slice 1 beef tomato into even-sized, and lay them on a kitchen towel on the board.Season the slices with 0.5 tsp of smoked paprika, 0.5 tsp of sugar, and a generous pinch of salt on the board. Set aside ready for later.Cut 1 ciabatta nearly all the way through the middle and open it out like a book on a medium tray. Bake for 5-6 minutes in the oven, until hot and crisp in places. Get on with the rest of the dish.Cut and discard the root from a head of lettuce. Thinly slice what remains crossways.Add 4 tbsp of mayonnaise to a large mixing bowl.
